Acetification

The chemical or biological process of converting a substance (especially ethanol) into acetic acid or vinegar.

From 'acetify' (to convert to acetic acid) + '-cation' or from 'acetic' + '-fication' (the suffix meaning 'the process of making'). 'Acetify' comes from Latin 'acetum' (vinegar) + '-fy' (to make).
