To make something smell pleasant or aromatic, or to convert into an aromatic compound through chemical treatment.

From aromatic (from Greek aroma meaning 'spice') plus the suffix -ise/-ize (meaning to make or treat). The British spelling with -ise emerged in the 19th century as chemical processes became more precise.
