Plural of cephalin; multiple phospholipid compounds found in brain and nerve tissues.

From Greek 'kephalē' (head) + '-in' (chemical compound suffix) + '-s' (plural marker). This is simply the plural form of cephalin, used when discussing multiple similar brain phospholipids.
