Cervelas

The plural of cervela, a type of smoked sausage that originated in Switzerland and is made from pork and beef.

From French cervelas, ultimately derived from Latin cervices (plural of cervix), likely because the sausage's shape resembles a neck or because it was traditionally cased in that part of the animal.
