A person who makes cheese professionally, combining milk with cultures and rennet to create different varieties of cheese.

Compound of 'cheese' (Old English 'cēse') and 'maker' (from Old English 'macian'). The term has been used since at least the Middle Ages when cheese production became a specialized craft.
