Chicory

A plant with blue flowers that is often used to make a coffee substitute, or whose roots and leaves can be eaten as a vegetable.

From Old French 'chicorée,' derived from Greek 'kikoria,' possibly from Arabic or Persian origins. The plant has been used medicinally and as food for thousands of years across Mediterranean regions.
