Chine

The backbone or spine of an animal, especially used to refer to the part of a meat cut that includes vertebrae; also means a deep ravine or valley.

From Old French 'chine,' from Latin 'spina' (spine); the word entered English in the Middle Ages and has been used both for animal anatomy and geographical features.
