The top titles or labels in a document, email, or data table that identify what information comes below them.

From 'head' (Old English 'heafod'), referring to something that comes first or at the top, plus the agent suffix '-er' meaning 'one that does' or 'thing that is,' forming 'header' in the 16th century to mean a heading or title.
