Plural of absinth; multiple bottles or varieties of absinthe liquor.
Etymology
From absinth (from Latin absinthium) + -es (plural marker). The plural form allows for discussion of multiple varieties or bottles of the spirit.
Kelly Says
Modern absinthes are making a comeback since the EU lifted the ban on thujone in 2007—connoisseurs now distinguish between 'verte' (green), 'blanche' (white), and 'rouge' (red) absinthes, each with different flavor profiles.
