Etymology

From Greek 'agauos' meaning noble or illustrious, referring to the plant's impressive stature. Agave has been harvested for food and beverage production in Mexico for over 9,000 years, with indigenous peoples using it for everything from sweetener to fiber to alcoholic beverages.

The same blue agave plants used to make tequila take 7-10 years to mature before their hearts can be harvested for syrup, and each plant can only be used once! Agave nectar is about 1.5 times sweeter than sugar due to its high fructose content, but this also means it has a lower glycemic index, causing less dramatic blood sugar spikes than regular sugar.
