Definition
The process or state of being thoroughly dried out; the removal of moisture.
Etymology
From Latin desiccatio, noun form of desiccatus (dried). The term became standard in science, medicine, and food preservation in the 19th century.
Kelly Says
Desiccation is why salt-dried fish could travel global trade routes for centuries—ancient peoples had figured out that removing water made food immune to the microbes that caused spoilage, long before anyone knew germs existed.
