A family of proteins produced in response to stressful conditions, particularly elevated temperature, that act as molecular chaperones to protect other proteins from damage. They help refold damaged proteins and prevent aggregation.

Etymology

Discovered in the 1960s when scientists noticed that fruit flies exposed to heat stress produced specific proteins. Originally called 'heat shock' proteins, though we now know they respond to many types of cellular stress beyond just temperature.
