Nougat

/ˈnuɡət/ noun

Definition

A chewy or hard candy made from sugar, honey, nuts, and egg whites, often containing almonds or pistachios. Popular in Mediterranean and Middle Eastern sweets.

Etymology

From Arabic نَاطِف (nāṭif), meaning 'dripping' or referring to a type of confection. The word entered English through Provençal nogat and French nougat in the 18th century. The Arabic term described the dripping consistency of the honey-based sweet.

Kelly Says

Nougat's Arabic name referred to its 'dripping' consistency when warm, and this candy was so prized that it traveled from Arab courts to become the signature sweet of French Provence! The famous nougat de Montélimar still follows techniques that trace back to medieval Arabic confectionery.
