Etymology
From Old English 'ripian' meaning 'to become ripe,' related to 'reap.' The word connects to the harvest concept - something becomes ready to be gathered and consumed when it reaches optimal ripeness.

Ripening is triggered by ethylene gas, which fruits produce naturally - this is why putting a banana with other fruits speeds up their ripening! Tomatoes can ripen off the vine because they produce their own ethylene, but berries cannot because they lack this ability.
