Etymology

From Old English styntan meaning 'to dull' or 'make blunt'. Related to 'stunt' (to check growth). The meaning evolved from 'to limit' to 'a limited period of work or service', first recorded in this sense in the 18th century.

A 'stint' originally meant to hold back or limit something - the idea being that work periods should have definite boundaries. Interestingly, the related word 'stingy' comes from the same root, describing someone who 'stints' or limits their generosity.
