Definition
The last milk drawn from a cow during milking, which contains more fat and nutrients than earlier milk.
Etymology
From 'after' (Old English æfter) plus the gerund suffix -ing, referring to what comes at the end. Used in dairy farming contexts since at least the 17th century.
Kelly Says
Afterings are richer in butterfat content because the cream naturally accumulates in the udder last—farmers learned that stripping all the milk got them premium dairy products, which is why complete milking practices developed!
