Buttermilk

/ˈbʌtərˌmɪlk/ noun

Definition

A tangy, sour dairy product that's either the liquid left after churning butter, or a cultured drink made to taste similar to that liquid.

Etymology

From 'butter' + 'milk,' literally the milk byproduct. Originally it was the thin liquid left when butter separated from cream during churning. Modern buttermilk is usually made by adding special bacteria to milk to sour it.

Kelly Says

Buttermilk used to be a waste product that poor people drank, but now it's deliberately cultured and expensive because bakers discovered it makes the most amazing fluffy pancakes and biscuits!
