Definition
A type of fish, plant, or possibly a pejorative term for a stubborn or resentfully defiant person.
Etymology
Compound from 'bitter' and 'head.' The term could refer to a fish or plant with a bitter taste concentrated in the head, or metaphorically to a person with bitter thoughts or feelings.
Kelly Says
In historical fishing communities, names like 'bitterhead' for specific fish were used to describe both physical and taste characteristics—knowing what 'that bitterhead fish' meant told fishermen whether it was worth keeping and how to prepare it.
