Definition
The process by which certain fruits, particularly medlars, soften and develop flavor through controlled overripening; present participle of blet.
Etymology
From French 'blettir' plus present participle suffix '-ing'. Describes the natural ripening process.
Kelly Says
Bletting is nature's own fermentation—it's like the fruit is composting itself slightly to become delicious. Medieval cooks understood bletting so well that they'd specifically pick medlars to blet before serving them at fancy dinners!
