Definition
A digestive enzyme produced by the stomach that curdles milk proteins, also called rennin, essential for cheese-making.
Etymology
From Greek 'chymos' (juice, chyme) + '-in' (enzyme suffix). Named for its action on chyme, the semi-liquid food in the stomach.
