From Old French 'dubber' meaning to strike with a sword (used in ceremonies conferring knighthood), possibly from Germanic sources. By extension, it came to mean any formal naming or conferring of status, and later applied to audio techniques in film.
Knights were literally 'dubbed' by being tapped on the shoulder with a sword—so when we 'dub' a movie into another language, we're ceremonially transforming it into something new, just like that sword tap transformed someone into nobility.
