Definition
A traditional meat product made from the cooked head of a pig or calf, typically mixed with spices, gelatin, and other ingredients, then pressed into a loaf shape; also called brawn.
Etymology
From 'head' + 'cheese' (from Latin 'caseus'). The name is somewhat misleading—there's no actual cheese; 'cheese' likely refers to the pressed, solid form, from an Old English word for 'curd' or pressed matter.
Kelly Says
Headcheese is an example of 'nose-to-tail' eating predating modern food trends—it's been made for centuries because efficient cooks used every part of the animal, wasting nothing!
